Matcha & White Chocolate Muffins Recipe

Ingredients

    Mixture 1
    • 2 Eggs
    • 90g Sugar
    Mixture 2
    • 130g Plain Flower
    • 10g Matcha Powder
    • 1tsp Baking Powder
    • 75g Vegetable Oil
    • 60g Plain Yogurt
    • 40ml Milk
    • 180g White Chocolate (Cut into 1 cm x 1 cm blocks)
    • Almond Slices For Topping

    Method

      Mixture 1
      1. Mix the eggs and sugar in a saucepan over low heat for 20-30seconds
      Mixture 2
      1. Mix plain flower, sifted matcha and baking powder thoroughly with whisk in a bowl
      To Finish
      1. Mix vegetable oil, plain yogurt and milk while stirring and combine with mixture 1 then add mixture 2
      2. Pour the mixture into paper cups and insert the white chocolate. Top up with almond slices.

      3. Bake for 18min at 170°C
